Brantley and I didn't have any big plans for Easter so we decided to make a yummy breakfast from one of our Costco cookbooks. Since it was just the two of us, we cut the recipe in half. The mixture didn't quite fill all 4 bowls, so we probably could've have squeezed it into 3 bowls. Oh well! It still tasted delicious!
Here's the recipe for Sausage and Rosemary Strata:
Ingredients:
cooking spray, 1 lb. breakfast sausage, 8 large eggs, 1 cup water, 6 cups cubed roasted garlic bread, 1 tsp. dry rosemary (or 1 tbls. chopped fresh rosemary), 1 cup shredded cheddar cheese
Cooking directions:
Preheat over to 350 degrees. Coat 8 individual ramekins or an 8-by-8 inch baking dish with cooking spray. Saute sausage over medium heat until cooked through, breaking into small pieces; set aside.In a large bowl, combine eggs and water and whisk until well blended. Add bread cubes, cooked sausage, rosemary and shredded cheese and mix well. Let mixture stand for 10 minutes.Pour into the prepared dishes and set in the oven. Bake individual ramekins for 25 minutes or the baking dish for 40 minutes. Let cool for 5 minutes and then serve warm.
