new recipes

At some point last week, I decided that I would try out yet another new recipe that I found on pinterest.  On the menu for last Sunday morning?  Protein pancakes!  Based on the picture, they seemed like they would taste yummy.  Believe it or not, B and I were kind of excited to try them.  So, I woke up and got right to it.  The recipe was quite simple and easy to follow, but I did make one substitution-chocolate protein powder instead of vanilla.

I know I followed the recipe as it read, but ours certainly did not look like the picture.  :(
They were flat, not light and fluffy like a pancake should be.  I can say, though, that they tasted much better than they looked-just like a chocolate protein shake with a hint of banana.  Mmm!
This recipe, however, was quite a success.  B made it just for me one Saturday afternoon.  It's toasted French bread topped with a pesto/cream cheese spread and grilled onions and tomatoes on top of that.  Yum-o!

I'm not sure if we'll make the protein pancakes again.  I think I can find breakfast recipes that are both healthy and tasty, but it was worth a shot and a nice change of pace from our normal routine.  We'll definitely have the French bread again but not within the next 10 weeks.  It doesn't exactly fit into the P90X recommended diet.  Bummer!
