Yesterday, Brantley and I made a delicious Easter dinner just for the two of us. On the menu was:
- pesto and mozzarella stuffed chicken breast (We didn't have and couldn't find almond flour so we just used regular white flour. Ours didn't seem to turn out quite the same as the one in the photo, but Brantley said it tasted great.)
- grilled asparagus
- roasted red potatoes with rosemary
- salad
- garlic/pesto bread (We had some leftover pesto mixture from the chicken so we used some of it on the bread.)
- chocolate covered strawberries for dessert


We started preparing the meal around 1:00, and we ate by 2:30. Not too bad for prep and cook time! Quick, easy, delicious-that's my style! :)
