For several weeks now, Brantley has been on the
Paleo diet. I'm not joining him on this one, but I am trying to maintain a low-carb intake. He's been planning our Saturday lunches, and they've all been quite delicious. Two weeks ago, he used our grill pan and served up a steak for each of us. I put mine on top of a salad. So yummy! Last week, we had salmon and roasted red potatoes. This week was
Paleo spaghetti. They've all been so tasty, that I can't pick a favorite! But I have to say that this week's meal takes the cake for the most interesting.

| The first step is to cut open a spaghetti squash and gut it like you would a pumpkin. Then, you drizzle it with olive oil and bake it for 40 minutes. |

The squash is a bit sweeter than pasta, and it has a different texture. It's a little crunchy but still just as yummy and flavorful as regular spaghetti and much healthier! In fact, all of the ingredients came from
Trader Joe's, and they're all organic. Brantley even found grass-fed beef! Neither of us had ever heard of "spaghetti squash" so we weren't sure if we'd be able to find it. As soon as we stepped foot in the store, we saw it on a huge display and was advertised as "the alternative to pasta."
Can't wait to find out what's on the menu for lunch next week!
