Last weekend, Brantley and I decided to try our hand at stuffed peppers. The recipe calls for ground beef so we added that to his portion, and we crumbled a veggie burger to add to mine (B's idea-and a great one it was!). They were easy to make and so delicious!
I took the photo before they went into the oven. Once they were baked, we topped with cheese. Yum, yum!
This morning I woke up in the mood to fix up something tasty for Brantley. Our kitchen isn't stocked with too much in the way of baking, so my choices were limited. I found a recipe for a German Apple Pancake, and luckily, we had all of the ingredients. As I was reading through the recipe, I noticed that the cooking was done in the microwave-even better! I didn't try the end result, but B said it was delicious. "It tastes like you put pancakes into a bowl of Cinnamon Toast Crunch." What's not to like about that, right?
The recipe said that it makes 6-8 servings. Ha! Not in the Byrd household! Brantley polished it off without a problem!
